I recently found out you can get a numerous amount of useful items from pickpocketing skeletonsm, but +3 plate and a +2 Griffin Slayer, come on. Why would a lowly skeleton be carrying such rare items if it didn't use them itself?

Good question! I asked myself the same thing when I read this. As a follow-up question, I asked myself "Well, what is a skeleton doing in these Dungeons in the first place?" and then "Well, what is a skeleton, anyway?". Then I arrived at a very interesting possibility.

But! You are free to make up your own justifications. You can't trust anything anyone says in a forum. Even a developer!
